Mediterranean Baked Cod with Summer Vegetables


This dish is packed with flavor and nutrients, making it a perfect choice for a healthy and satisfying meal. It's low in calories and fat, while still being high in protein and healthy fats from the fish and olive oil.


Ingredients:


2 cod fillets (around 150g each)

1 zucchini, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1/2 red onion, sliced

1 roma tomato, diced

1/4 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese

1 tablespoon olive oil

1/2 teaspoon dried oregano

1/4 teaspoon dried thyme

Salt and pepper to taste

Instructions:


Preheat oven to 200°C (400°F).

In a bowl, toss together zucchini, bell peppers, red onion, roma tomatoes, cherry tomatoes, olive oil, oregano, thyme, salt, and pepper.

Spread the vegetable mixture evenly in a baking dish.

Place the cod fillets on top of the vegetables.

Bake for 15-20 minutes, or until the cod is cooked through and flaky.

Sprinkle with feta cheese before serving.

Tips:


For a vegetarian option, replace the cod with tofu or tempeh.

You can use any type of vegetables you like in this dish.

If you don't have fresh herbs, you can use 1/2 teaspoon of dried oregano and 1/4 teaspoon of dried thyme instead.

Serve with a side of brown rice or quinoa for a complete meal.
